Airfryer Keto Deviled Eggs

IMG_3925.JPG

Remember when you were a kid at a church potluck or a family reunion, and you steered clear of the deviled eggs because WHO KNOWS what Helen put in those?! Some would be sweet, some crunchy, and some with ingredients that didn’t make any sense to deviled eggs.

Over the course of 23 years of homemaking, I’ve realized, the simpler- the better. Okay, that pretty much goes for anything in life— but ESPECIALLY deviled eggs! No sugar. No relish. No weird stuff.

Funny side note: I can cook a bougie 4 course meal, but have the hardest time getting hard boiled eggs right. So, I’ve found the easiest, most foolproof way, where I get them right EVERY SINGLE TIME, GUYS!

Disclaimer- I don’t know how to cook for under 8-12 people, so most of my recipes will serve a larger amount. Adjust accordingly by using a calculator. I left that fun part up to you!

Yields: 36 deviled eggs

Ingredients:

  • 18 eggs

  • Mayonnaise

  • Yellow mustard

  • White vinegar

  • Paprika and salt (opt.)

Tools needed:

  • Airfryer

  • Ziplock bag and scissors

  • Small bowl for filling

  • Large bowl for water bath

Instructions:

  • Add 18 eggs to 7 qt airfryer. If you have a 5.8qt, you can do this part twice, if needed.

  • Airfry eggs on 270° for 17 minutes. *** NOTE: There may be little brown spots on the eggs when they come out- that’s normal, and they disappear in the water.

  • Add to a cold water bath until cool.

  • Peel eggs and slice lengthwise down the center.

  • Remove yolks and put in a small bowl.

Mix together in a small bowl:

  • 18 Yolks

  • 3/4c Mayo

  • 1 TBSP yellow mustard

  • 1 TBSP white vinegar

Camping Hack:

Don’t be fooled! These make an EASY low carb/keto camping side or snack for the whole family! Just prepare the eggs and filling ahead of time. Add the eggs to a covered egg container and don’t snip the ziplock until you are ready to eat. Just pipe filling onto however many eggs you want to eat at that time, then put the rest of the filling and eggs back in the refrigerator for later! I just put the filling bag into a second ziplock to preserve it once it’s open. These don’t last long with my crew, but we have had them on day 4 and they were still fresh!
